Creamy Cole Slaw (Dairy Free)

Black-eyed peas, okra (not so much), sweet potatoes, cornbread stuffing, spicy sage sausage, hominy grits, fried whiting, porgies, butterfish, hoppin’ John, succotash, corn on the cob, fried green tomatoes, cole slaw, cabbage and potatoes, string beans and ham, lima beans and neckbones, fatback, salmon cakes, tuna fish cakes, baked ham, barbeque spare ribs, chicken and dumplings, fried chicken livers, liver and onions, cornbread, sweet potato pie, macaroni and cheese, iced tea, lemonade, limeade, homemade ice cream (made from new-fallen snow), and…are you hungry yet?

She sent us a lovely Dairy-Free Creamy Cole Slaw.

Creamy Cole Slaw (Dairy Free)

Ingredients:
  • 1 green cabbage, medium
  • 1 carrot, medium
  • 1 cup non-dairy mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon of Old Bay seasoning
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of paprika
  • Raw honey, to taste
  • Sea salt and black pepper, to taste

* Add a pinch of cayenne pepper to create a spicy, creamy slaw

Instructions:
  1. Core the cabbage. Grate the cabbage and carrot. Stir the cabbage and carrot together in a large bowl.
  2. In a separate bowl, blend the non-dairy mayonnaise, apple cider vinegar, onion powder, garlic powder, Old Bay seasoning, and paprika together. Then, add the raw honey and sea salt in increments, until the taste is a balance of tart, sweet, and salt. Be modest with the honey and the salt. Add black pepper, as desired.
  3. Now, add all of the ingredients to the cabbage and carrot medley.
  4. If spicy is the goal, for a tinge of gastronomical excitement, add a dash of cayenne pepper.
  5. Stir the slaw and the seasonings together, until they are thoroughly mixed.
  6. Do a taste test.
  7. If any one of the flavors is too overpowering, just add a little more mayonnaise to bring balance to the dish.
  8. Cover and refrigerate for 30 minutes. Serve chilled.


Remember The Outer Limits? "You control the horizontal, you control the vertical."

The cole slaw should have a creamy consistency and will pair well with your favorite sandwich, fried fish, or even a robust green salad. Don't forget the avocados!
